Lamb and Noodle Salad
|3/4||cup||NESTLÉ CARNATION light & creamy coconut flavoured evaporated milk (190ml)|
|2||tbsp||maggi sweet chilli sauce|
|2||tbsp||reduced-fat peanut butter|
|spray oil for cooking|
|300||g||lamb fillets, trimmed|
|900||g||fresh thin hokkien noodles|
|150||g||green beans, cut diagonally|
|1||small||red onion, cut into thin wedges (100g)|
|3||stalks||celery, cut diagonally (180g)|
|400||g||can baby corn, halved lengthways|
place NESTLÉ CARNATION light & creamy coconut flavoured evaporated milk, maggi sweet chilli sauce, soy sauce and peanut butter in a small saucepan. stir over low heat until combined. remove; set aside.
place noodles in a large heatproof bowl; cover with boiling water. stand until just tender; separate with a fork; drain well.
place beans in a bowl, cover with boiling water, stand for 3 minutes. rinse under cold water and drain.
arrange noodles, beans, onion, celery, corn and lamb on serving plates; drizzle with dressing.
