Ingredients

3/4 cup NESTLÉ CARNATION light & creamy coconut flavoured evaporated milk (190ml)
2 tbsp maggi sweet chilli sauce
1 tbsp soy sauce
2 tbsp reduced-fat peanut butter
spray oil for cooking
300 g lamb fillets, trimmed
900 g fresh thin hokkien noodles
150 g green beans, cut diagonally
1 small red onion, cut into thin wedges (100g)
3 stalks celery, cut diagonally (180g)
400 g can baby corn, halved lengthways

Method

    place NESTLÉ CARNATION light & creamy coconut flavoured evaporated milk, maggi sweet chilli sauce, soy sauce and peanut butter in a small saucepan. stir over low heat until combined. remove; set aside.

    place noodles in a large heatproof bowl; cover with boiling water. stand until just tender; separate with a fork; drain well.

    place beans in a bowl, cover with boiling water, stand for 3 minutes. rinse under cold water and drain.

    arrange noodles, beans, onion, celery, corn and lamb on serving plates; drizzle with dressing.
