Ingredients

4 john or mirror dory (or other white boneless fish) fillets
freshly ground black pepper
1 bunch mini asparagus
1 tbsp oil
1 small leek, sliced (200g)
2 cloves garlic, chopped
1 red chilli, finely chopped, optional
2 tsp finely chopped ginger
2 tsp finely chopped kaffir lime leaves optional
100 g sliced mushrooms
375 ml fish stock
1 tbsp maggi authentic thai fish sauce
375 ml can NESTLÉ CARNATION Light & Creamy Evaporated Milk
1/2 cup thinly sliced green (spring) onions

Method

    lay fillets onto chopping board skin side up. sprinkle with pepper. divide asparagus evenly between fish. roll firmly, securing with toothpicks. set aside.

    heat oil in a large saucepan over medium heat. add leek, garlic, chilli, ginger, leaves and mushrooms. cook 5 minutes or until fragrant and mushrooms are tender. add stock and fish sauce, bring to the boil; simmer 5 minutes.

    add NESTLÉ CARNATION light & creamy evaporated milk and fish rolls; simmer 15 minutes or until fish is cooked through. stir through green onions.
