Dory Fish with Aspagus in a Creamy Asian Broth
|4||john or mirror dory (or other white boneless fish) fillets|
|freshly ground black pepper|
|1||small||leek, sliced (200g)|
|1||red chilli, finely chopped, optional|
|2||tsp||finely chopped ginger|
|2||tsp||finely chopped kaffir lime leaves optional|
|1||tbsp||maggi authentic thai fish sauce|
|375||ml||can NESTLÉ CARNATION Light & Creamy Evaporated Milk|
|1/2||cup||thinly sliced green (spring) onions|
lay fillets onto chopping board skin side up. sprinkle with pepper. divide asparagus evenly between fish. roll firmly, securing with toothpicks. set aside.
heat oil in a large saucepan over medium heat. add leek, garlic, chilli, ginger, leaves and mushrooms. cook 5 minutes or until fragrant and mushrooms are tender. add stock and fish sauce, bring to the boil; simmer 5 minutes.
add NESTLÉ CARNATION light & creamy evaporated milk and fish rolls; simmer 15 minutes or until fish is cooked through. stir through green onions.
