Ingredients

2 cups (250g) pitted dates chopped
3/4 cup (190ml) boiling water
1 tsp bicarbonate of soda
185 g butter softened
1 cup (220g) brown sugar
2 eggs
1 1/4 cups (185g) plain flour
1 tbsp custard powder
1 can (375ml) NESTLÉ CARNATION Light & Creamy Evaporated Milk
1/4 cup (55g) brown sugar extra
1/4 cup (90g) golden syrup

Method

    preheat oven to 180°c/160°c fan forced. grease and line a 20cm square cake pan.

    combine dates, water and baking soda, stand 30 minutes.

    beat butter and sugar until light and creamy, beat in eggs one at a time. fold in date mixture and sifted flour. spoon evenly into prepared pan.

    bake 50-60 minutes or until a skewer inserted into the centre comes out clean.

    meanwhile, to make caramel sauce, blend custard powder with 1/4 cup (60ml) NESTLÉ CARNATION light & creamy evaporated milk in a saucepan; add remaining milk, extra brown sugar and golden syrup. stir over a low heat until custard boils and thickens.
