Ingredients

4 eggs separated
1/2 cup sugar
375 ml NESTLÉ CARNATION light & creamy evaporated milk
1 tbsp gelatine
1/4 cup water
1 cup roughly chopped mango
1/2 cup roughly chopped peach
2 mangoes extra, sliced

Method

  • 1

    beat egg yolks and sugar in glass bowl until light and creamy. beat in NESTLÉ CARNATION light & creamy evaporated milk. place over pan of simmering water, beat until mixture thickens slightly (approximately 10 minutes).

    sprinkle gelatine over water, dissolve over hot water, stir into milk mixture, cool. freeze until just beginning to set.

    spoon mixture into large bowl of electric mixer, beat until thick and creamy.

    place mango and peach in blender or food processor, blend until smooth, fold into mousse mixture with stiffly beaten egg whites.

  • 5

    arrange extra sliced mangoes in base of individual serving glasses, spoon mousse over mangoes, refrigerate until set. if desired, decorate with whipped cream.
